We moved to Colorado in 1997 from Wisconsin. Strong family ties and good friends have been our energy. Our philosophy? It’s never too late.
Tony has been in restaurants for over 30 years working his way up through the ranks as many do. You can witness his talent and skill when you visit our truck. I (Pauline) have worked in restaurants since I was 18, gave the corporate world a 12 year whirl and decided cooking was my niche after all. 2015 we reached a tipping point in our careers working for other people and decided to do what we like. Cruz In & Eat debuted in September 2016.
Our goal is to live life to the fullest each day. We love what we do and appreciate those around us.

I have been visiting this amazing food truck for quite a while now and have never been disappointed! I love the barbacoa tacos, pork green chili, and shrimp tacos when they are available on special. Super friendly staff and great prices. I definitely recommend them!
This is the best food! Pork tacos are crazy good and the sauce that comes with tacos is just right. (It’s got a little zip which I love.) I can’t wait to try their breakfast too as it looks aaa-maaazing! My kids love the quesadillas!

Cruz in & Eat recently came to a neighborhood event in Aurora. We wanted to support them for supporting our community. As a man from Pueblo, I know my way around this type of food and I can tell you this meal was delicious. I ordered a Mexican hamburger w/ Fries. Portions were huge, the chili was solid, not hot but plenty of flavor, and the fries were solid. We will def. look forward to enjoying their food again.
